Grilled cod gyros with a side of lemon basil sauce

Mediterranean pan-grilled cod recipe with lemon basil sauce. Serve it with your favourite sides, or try it gyro-style wrapped in warm pita with Mediterranean favourites like tzatziki, olives and more! Check out the recipe here.

Ingredients:

  • 1 1/2 tsp dried oregano
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp sumac

For Fish:

Lemon Basil Sauce:

  • 1/3 cup Greek extra virgin olive oil
  • 1 large lemon, juice of
  • 1 to 2 garlic cloves, minced
  • 8 to 10 basil leaves, thinly chopped
  • Salt and pepper

Fixings:

  • Greek pita bread (or lettuce wraps for low-carb option)

  • pitted marinated olives

Instructions:

  1. In a small bowl, first combine the spices to make the spice rub. Next, pat the fish fillets dry and season them well on both sides with kosher salt and black pepper. Then, rub the fillets all over with the prepared spice rub and set them aside for now.
  2. Meanwhile, prepare the lemon basil sauce. Simply combine all the ingredients for the sauce in a small bowl or mason jar, and whisk everything together thoroughly. Once done, set the sauce aside.
  3. If you’re serving this grilled fish gyro-style, now is a good time to prepare the pita and accompaniments. Follow the recipe for Tzatziki sauce and also prepare the Mediterranean salad using the provided recipe. Once everything is ready, set both aside.
  4. Next, coat the bottom of a large cast iron skillet with extra virgin olive oil. Warm the skillet over medium-high heat until the oil begins to shimmer but make sure it’s not smoking.
  5. Carefully add the fish fillets to the skillet, grilling them on one side for about 3 minutes without moving them (the underside should look golden and crispy). Then, using a fish spatula, turn the fillets over to grill the other side. This side should also become crispy and golden after another 3 minutes. You’ll know the fish is fully cooked when it turns opaque all the way through and flakes apart easily.
  6. Finally, serve the fish hot with a splash of fresh lemon juice and a generous drizzle of the lemon basil sauce.
  7. To assemble the grilled fish gyros, take one pita wrap (or a large lettuce leaf) per person. First, swipe a bit of tzatziki sauce over the pita, then add the grilled fish and lemon basil sauce. After that, top with a bit of the Mediterranean salad and olives to your liking.
  8. Finally, wrap or fold the pita and enjoy!
