One Tray Tarakihi Bake November 27, 2024
Ready in under 25 minutes, this one tray Tarahiki bake couldn’t be easier. Baked to perfection with roasted chickpeas, capsicum and cherry tomatoes and finished with a squeeze of fresh lemon juice. Check out the original recipe here.
Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 1 onion, sliced
- 2 capsicums, thinly sliced
- 250g cherry tomatoes
- 2 cloves garlic, thinly sliced
- 1 tsp paprika
- 4 Tarakihi fillets
- 1 lemon, cut into wedges
Method
- Preheat your oven to 180°C fan bake.
- Add chickpeas, onion, capsicum, cherry tomatoes, garlic and paprika to a large baking dish. Drizzle with oil and toss to combine.
- Place in the oven to bake for 10 minutes.
- Nestle the Tarakihi fillets in the baking dish, drizzle lightly with oil and season with salt and pepper. Return to the oven to bake for a further 8-10 minutes or until the Tarakihi is cooked through and flakes easily with a fork.
- Serve with lemon wedges.
Top tip: Garnish with fresh parsley leaves and serve with crispy potatoes or crusty bread for a marvellous meal.
